Thanksgiving is just a few days away which means pumpkin spice season is in full effect. Hermione loves a pumpkin treat just as much as anyone else! Recently she has been OBSESSED with these Frozen Pumpkin Pie Bites. These treats are super easy to make and contain only a handful of healthy ingredients like organic pumpkin and raw cashews. Packed with Vitamin C, healthy fats, and magnesium for bone strength I am happy to let Hermione indulge in these delicious bites. Much better for her little growing body than traditional pumpkin pie. Hermione loves these so much she heads for the freezer and asks for "pumpkin please!" as soon as she wakes up in the morning. She eats a few throughout the day as snacks and dessert, which is ok with mama because of all the health benefits they give her!
Hermione's Frozen Pumpkin Pie Bites
- 1 cup organic pumpkin purée
- 1 cup soaked cashews
- 1/4 cup melted coconut oil
- 2 T maple syrup
- 1 tsp stevia
- 1 tsp cinnamon
- pinch of ginger.
- Pinch of nutmeg
- Pinch of sea salt
- Combine all ingredients in high speed blender or Vitamix until smooth
- Spoon the mixture into mini muffin cups and freeze
- Serve cold directly from the freezer!
